Salad Niçoise with a sweet potato twist
This salad is as healthy and tasty as it looks. Super simple, yet full of nutrients and vitamins (omega 3, vitamin C, vitamin B6, Vitamin D and many more). A delicious salad Niçoise with tuna fillets and sweet potato.
Time: 20 minutes
2 large sweet potatoes
Formosa Gourmet Tuna fillets in olive oil
5 tablespoons Olive oil
1 tablespoon Dijonsenap
1 Garlic clove
1 tablespoon Oil from the tuna can
Salt & pepper
Crush the garlic clove and mix it with all the ingredients for the dressing. Keep the dressing in the fridge.
Scrub the sweet potato and boil in water for 10 min.
Boil the green beans in water 2-3 min.
Boil and peel the eggs.
Slice the cherry tomatoes and the paprika.
Separate the tuna fillets into smaller flakes.
Make a bed of lettuce on a large serving plate and put all the ingredients on top.
Sprinkle the dressing and serve immediately!
